If you feel slow, sluggish, tired or on a hot day, hot coffee or tea probably does not sound particularly appetizing. That is why iced coffee and tea has become so popular! The current opportunity to get caffeine increases without drinking hot liquid onto an already hot or humid days. Here are some tasty recipes to try next time you have some time on your hands or looking for an iced drink to serve at the next meeting.

Iced Tea

Prepare coffee twice the usual strength. Pour hot coffee over cracked ice in large glass or over ice in large pitcher. Serve with plain or whipped cream and sugar or serve black.

Austrian iced coffee

Half fill glass with high cracked ice, sprinkle powdered sugar on ice, as desired, and place 1 tablespoon cream in each glass. Pour hot strong coffee in iced glasses.

Iced cafe au lait

Pour a cup of double strength coffee over cracked ice in tall glass, add a small scoop of vanilla or coffee ice cream, serve immediately.

Iced Cafe Chocolat-

Shake or beat thoroughly one cup of strong coffee, 1 tablespoon chocolate syrup, 2 tablespoons whipping cream and 3 tablespoons sliced ice. Serve immediately. A cute idea for parties and gatherings is to buy your own coasters, sandstone coasters, coaster sets and coffee cups with coffee beans or printed on them.

Frosted Tea

Half fill six high glass with chopped ice and pour hot strong coffee over ice until the glass is three quarters full, and top each with a heaping tablespoon of vanilla ice cream. Use the fourth hot coffee for six glasses.

Coffee Delight

4 cups of iced coffee
1 cup whipping cream
8 tablespoons syrup
1 liter ginger ale

Mix coffee and syrup. Fill eight high glass ¾ full of crushed ice. Whip the cream in each glass add ¼ cup cream, ½ cup of coffee mixture and ½ cup of ginger ale. Stir.

Iced Tea

Prepare strong tea, with 1 ½ teaspoons per cup. Pour hot tea over cracked ice in large glass. Or pour hot tea over ice in large pitcher. Tea is clearer and more sparkling cooled faster than cooled slowly. Garnish with lemon or orange slice. Absorbent table coasters and cocktail napkins would be smart to have on hand in case of lemon or orange slices thrown aside, it will keep them from staining the table or cloth.

Iced Ginger Tea

Boil the ginger in water 2-5 minutes, or until the water is flavored as desired, strain, use boiling liquid for the preparation of strong tea. Proceed as for Iced Tea.

Spiced Iced Tea

2 cups sugar
2 cups water
5 teaspoons of black tea
5 mint leaves
1 teaspoon allspice
1 ½ cups strained orange juice
¾ cup strained lemon juice
4 quarts ice water

Boil sugar and water 5 minutes, add tea, mint and spices, cover and let stand easily 15 minutes, strain and add juice. Pour over cracked ice, add water and serve. These measurements serve about 15 to 20 servings. Specialty tea cups, personalized paper coasters and a sugar caddy may be necessary at a tea party or other meeting.

Mint Iced Tea SYRUP

For two cups of tea infusion, add 1 bunch mint, crushed, 6 tablespoons lemon juice, 3 / 4 cup sugar and 3 whole cloves, chill several hours. When ready to serve, strain and add 1 pint white grape juice, ¼ cup each of diced pineapple and sliced maraschino cherries, sliced thin 1 orange, cut into eighths, and one liter of aerated water. Pour into high glass half-filled with cracked ice and garnish with sprig of fresh mint. Makes enough for 15 high glass.
